The legal Danger Zone
Bacteria are the leading cause of food poisoning, and like any living thing they need warmth, moisture, food and time to multiply.
The Danger Zone — is set in law at 8°C to 63°C. Inside that band, harmful bacteria such as Salmonella, E. coli O157, Campylobacter and Listeria divide rapidly, with growth peaking around human body temperature (37°C). Below 8°C growth slows right down; above 63°C it stops.
- Fridge ≤8°C (1–5°C ideal)
- Cook / reheat to 75°C for 30s
- Hot hold ≥63°C
- Cool to <8°C within 90 min
